Vinification: In stainless steel tanks at a controlled temperature (24/26°C); once the base wine is obtained, wine-derived ethyl alcohol is added before starting a long maturation period in oak casks lasting over 10 years
Colour: Antique golden yellow with subtle amber highlights
Bouquet: A complex bouquet with notes of honey, orange peel, and yellow-fleshed fruit preserved in spirits, complemented by sweet spices derived from the wood
Taste: Dry, powerful, with great structure and alcoholic character; it shows a perfect correspondence with the aromas perceived on the nose, lingering beautifully on the palate
Alcohol content: 19% vol.
Residual sugar: 4 grams/litre
Minimum wood aging: 5 years in oak casks
Minimum bottle aging: 3 months
Food pairings: A great meditation wine, to be savored with “Tagliancozzi” (traditional dry almond biscuits); it beautifully pairs with cottage cheese and creamy Sicilian pastries. Truly unforgettable when enjoyed with dark Modica chocolate, extra-aged or blue cheeses.
