Vinification: Grapes harvested at overripeness continue to dry on racks before being added to the must during the peak fermentation under temperature-controlled conditions (14–16°C). Upon completion of this process, maceration continues for additional 3 months, ultimately yielding a remarkably aromatic and well-balanced wine
Colour: Golden yellow with amber highlights
Bouquet: Complex and balsamic, where typical hints of ripe apricot and candied citrus gently blend with notes of dried figs, dates and acacia honey
Taste: Sweet, full, harmonious and intense; it has a notable structure supported by an extraordinary persistence
Alcohol content: 14% vol.
Sugar content: 140 grams/litre
Minimum aging in tanks: 3 months
Minimum aging in the bottle: 6 months
Food pairing: An unforgettable dessert wine, it pairs perfectly with chocolate and cottage cheese desserts such as Sicilian cassata, as well as fig or quince jam tarts; it is surprisingly exquisite when paired with tuna bottarga or blue cheeses
