Description
The Director of the Liturgical Office of the diocese has the wine analyzed by an accredited chemical analysis laboratory . The tank containing the wine for Holy Mass is sealed by the Director of the Liturgical Office to ensure its authenticity. If the analysis determines the wine is suitable, the Diocese issues a certificate authorizing the company to market and produce it. Each time the wine is drawn for bottling, the seals are removed only by the Director of the Liturgical Office or his delegate. Only in his or her presence can the wine be bottled and then shipped to dioceses around the world, accompanied by a certificate of suitability issued by the Diocese of Mazara del Vallo.

Vinification: In stainless steel tanks at a controlled temperature (16/18°C); after the first 5-6° of alcohol has been released during alcoholic fermentation, ethanol of wine origin is added up to around 16° to block the fermentation process and thus preserve a good part of the sugars and aromas of the starting must.
