Vinification: In concrete tanks; once the base wine was obtained, wine-derived ethyl alcohol was added before starting a long maturation period in oak casks, started in 1986
Colour: Antique golden yellow with typical copper highlights
Bouquet: Ethereal, it shows refined hints of candied fruit, leather, toasted almonds and sweet spices given by the wood
Taste: Intense, warm, perfectly balanced; it stands out for its persistent and very long finish
Alcohol content: 19% vol.
Residual sugar content: less than 10 grams/litre
Aging in wood: Started at the end of 1986
Minimum refinement in the bottle: 1 year
Food pairings: An unforgettable meditation wine, to savor with traditional “Tagliancozzi” almond biscuits, it also beautifully pairs with classic Sicilian cottage cheese and cream pastries. Truly exceptional when enjoyed with dark Modica chocolate, as well as with aged or blue cheese
