Vinification: In concrete tanks; once the base wine was obtained, wine-derived ethyl alcohol was added before starting a long maturation period in oak casks, started in 1988
Colour: Antique golden yellow with typical amber highlights
Bouquet: Complex with notes of honey, dried fruit, toasted hazelnuts and sweet spices given by the wood
Taste: Definitely dry, intense, harmonious, with a pleasant and a very long persistence on the palate
Alcohol content: 18% vol.
Residual sugar content: less than 10 grams/litre
Aging in wood: Started at the end of 1988
Minimum refinement in the bottle: 1 year
Food pairings: An extraordinary meditation wine, to be savored with “Tagliancozzi” (traditional dry almond biscuits); it also beautifully pairs with cottage cheese and creamy Sicilian pastries. A must-trying it with dark Modica chocolate, as well as with aged or blue cheese
